crockpot pumpkin bread

this dear friends is a keeper.

scour through your pantry and cabinets for the ingredients and make it today.

so easy to make and it is by far the moistest pumpkin bread i have ever had.

i found the recipe on pinterest.

it’s by let’s get crockin.

crockpot pumpkin bread

1/2 cup oil

1/2 cup sugar

1/2 cup packed brown sugar

2 eggs (beaten)

1 can pumpkin

1 1/2 cup sifted flour

1/4 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1 tsp baking soda

blend the oil and both of the sugars in a large bowl.

stir in the beaten eggs and canned pumpkin.

add the remaining dry ingredients and mix thoroughly.

pour the batter into a greased bread pan. (make sure this pan fits in your crockpot.)

add 2-3 cups of water to your crockpot and place the pan in the crockpot.

cover the top of the crockpot with 6-8 paper towels.  this is to trap condensation and keep the bread from becoming mushy.

place the crock pot lid on top of the crockpot and make sure the paper towels are trapped and don’t slip down.

bake on high for 2 1/2 to 3 hours.  i was closer to 3 hours.

i love mine warm with butter.

a week of inspiration – day six

i have shared this with you before…

i am not a cook.

i wish i was, really i do.

that gene skipped me.

but i am trying to change that.

lately i have been cooking more and trying new dishes.

What’s Cookin’?

It took me a while to get back in the swing of cooking after the kitchen remodel.

You’d think I would have been so excited to get in there and cook for the family but I didn’t want to mess it up.

 

Well, I’m back in there and loving it!!

Yesterday I made a pork roast, au gratin potatoes, salad and garlic bread for Sunday lunch.

mmmmmm.

And I finished it off with these babies.

 

Carmelitas via LuLu the Baker.

Served with a scoop of vanilla bean ice cream.

HEAVEN!!!

I doubled the recipe and substituted gluten free flour for half the flour and they were so good.

 

So what’s for dinner this week?

 

Cheeseburger salad from Pioneer Woman.

I have leftover salad from yesterday so I am going to make the meat mix today and we are good to go.

 

Cheddar Baked Chicken

Probably served with fried noodles and corn.

That looks so yummy.

Roger is not a huge mexican food lover, but he is out of town this week so I am serving this up.

I love mexican food.

 

I’ll be realistic, with him out of town, we will be eating out too.

So if I get three good meals cooked I consider that an accomplishment.
